Modern Spanish-Portuguese restaurant Broma opens in Mountain View

Michelin-starred chef Jarad Gallagher’s travels throughout the Iberian Peninsula have inspired him to open  Broma, a new Mediterranean restaurant with an emphasis on Spanish-Portuguese cuisine located inside the  Shashi Hotel in Mountain View, where Gallagher serves as vice president of culinary operations. This is not  Gallagher’s first restaurant project: He and Justin Rodriguez, director of food and beverage operations, also  collaborated on the menu for The Emerald Hour, a restaurant that opened last year at the Shashi Hotel, serving  cocktails and mostly small plates. Gallagher and Rodriguez also previously worked together at Michelin starred Chez TJ in Mountain View. 

The restaurant features a seasonal prix fixe menu that rotates daily, as well as a la carte menu items made with  local and international ingredients. When creating the menu, Gallagher and executive chef Aubree Arndt  wanted to present fine dining as approachable and available to those with dietary preferences, Gallagher said in  a statement. 

“When I first traveled through Spain and Portugal, I was in awe of their rich and vibrant cultures,” Gallagher  said. “I instantly felt inspired by the bold, hearty cuisine and the passion for artistry. … When people dine at  BROMA I want them to feel transported and inspired, without the unnecessary formality of fine dining.” 

Signature dishes on the a la carte menu include Spanish octopus with a chili glaze, Alentejo pork cheek with  kimchi and Valrhona Manjari mousse with chili sponge cake.

Rodriguez has contributed to the beverage menu at Broma, expanding on the drink list from The Emerald Hour.  Drink selections include a coffee martini with California sherry, a Paloma with hints of ginger, and alcoholic  and non-alcoholic housemade sodas accompanied by Spanish ingredients.
